String size and keys

I have a Ron Ewing 3-string Dulcimette. It has a really sweet sound.

I am just wondering how to determine the best size strings to use, and what are the best keys to tune it to. I have just kind of winged it up till now, but thought it would be nice to actually figure out what works best.
