Use of a noter to play is a wonderful way to play. It is the way the folks of old in the Appalachian Mountains played in the 1800's and up to about the mid 1900's. It is a bit of a different sound than playing chords. Try it and see what you like. After all the best way to play the mountain dulcimer is the way you like and that sounds good to you.
