finish on poplar

I am getting ready to assemble an instrument, all yellow poplar ecept for a black walnut fretboard overlay. I know poplar is a rather plain wood, that darkens with UV exposure. I have one with a poplar top and it has darkened several shades. I normall use two coats of Minwax finish, well rubbed out, has anyone tried other finishes?
