Hey Ken! just picked up your message, Had a houseful for the holiday weekend, been busy, even done most of the cooking, we are pushing eighty, and I do try and take the strain where I can!!! Like other things, you are right about the common lanuage, tho' of course it it just not that, it is only fairly recently that we have started to regard peppers as an every day cooking ingredient; when we first got married ('52) they were just not around, 'twas the advent of easy travel that began to expose us to more exotic fare than " Roast Beef and Yorkshire Pud". Jamie Oliver! Are you able to see his stuff over there? We have almost non stop cookery programs on our screens, and this of course has presented many more options aimed at tickleing our taste buds. The next time I visit our local Mexian resturant I can toss out some pepper based terms as if I know what I am talking about! Be interesting to see what arrives on the table! Ok John. You've gotten the start of an American culinary vocabulary now that we've cleared up Garbanzos for you. You also know that Anchos are dried Poblano peppers, both of which have more flavor but almost no more heat than an ordinary bell pepper. And a Chipotle is a ripe and smoked (not grilled as someone said) Jalapeo pepper. Oh yes - and Wax beans are like green beans but more subtle flavor, and they are sometimes called string beans or butter beans.

Pepper have confusing names because they change name often, when dried - like Poblano/Ancho and jalapeo/chipotle. Poblanos/Anchos are very mild - often hardly warmer than a green or red bell pepper. Another mild dried pepper is the Chile Negro and Chile Mulatto. Soaking a dried pepper for 20 minutes in warm water brings them back to life. Chipotles are definately spicy. You quite often find them canned "en adobo sauce" which is a decidedly spicy tomato sauce.

Here's one you may or may not know - the salad green you call Rocket we call Arugula! Took me forever to figure out what Jamie Oliver was nattering on about!

Garbanzo are also called Chick peas. They are the main ingredient in all the falafels I've ever had and frequently used in bean salads with green beans, wax beans, kidney beans and onion. Round, creamy colored with a size that is larger than a green pea.

Ancho are the dried form of the poblano peppers which are usually a mild sweet chili pepper. Though as I understand they can fool you sometimes as to their heat factor.

And chipotle are grilled jalapenos. They give a smoky heat to a dish.

Ken will probably be able to give us the exact heat factor each chili brings to the dish. All I know is that though I love spicy dishes these peppers are completely off my list for ingredients. Anything hot doesn't got into my pot anymore. DARN That's why I'm glad Ken is making this dish for a cyber party, as I'll be able to enjoy the thought of it, and not actually have it in front of me as a temptation. ;-)

I would keep my battered old Cherry and Cedar teardrop, I made it it 1986, it is responsive and tolerant of my playing (makes it sound better than than it is!) I have also had the pleasure of hearing it played by many people over the years, some of whom put there name on it at my request , including:-My great-grandson Josh, and my son Paul; among others can be seen John Shaw, Roger Nicholson, Liz Law, Maddie MacNeil, Butch Ross, Lorraine Lee Hammond, and Jean Richie. In effect it tracks most of my dulcimer life, so it has to be the one I keep!!!JohnH

The more unusual wood there is the steamed beech. We used to use it for high quality storage cases as it's pollutant free. Ideal for fretboaards though because of it's resistence to abrasion.

Don't ever mention the word Meranti again. I've taken more splinters off of that damn stuff than all the other woods put together.

Rod, with reference to the party. I do'nt wish to offend but could you please find someone else to look after the 'Dew' should any turn up this time. I think that Stumelia was under the impression that I had looked after it far to well at the last party, causing me to miss the clearing up after the party had finished! As I try to take 'note' of all she says, and in order to stay in some sort of 'a-ccord' with her, and so as not to be seen 'stringing' her along causing her to 'fret', I think I might just bring an Arctic Roll this time.Sorry all!!! Ken is right Robin, it is to be loved , tho' not particularly 'healthy', more along the lines of decadent, but one of my favourites never-the-less ! For some years now one of our family treats is a varient on the theme, three layers of meringue, separated by and topped with whipped cream containing chopped stem ginger, decorated with sliced Kiwi; and served with pouring cream ! Yes, a killer of a dessert, but worth a try once in a blue moon ! (I like to save some for 'the next day', when the meringue has gone a bit soggy!)

Memory in the heart is good Strumelia, for me more than most perhaps, I received his book of tab just about the time he left us, while I was in hospital for a heart procedure. One of the reasons I conjured up a tune for him ! And yes, he would be happy, beaming whilst he tossed that 'Deputy Mo silver bullet' from hand to hand !

That brings back memories Maryann ! In 1940's wartime UK meat was rationed, but not offal !,which was also cheap compared to 'proper meat'. My mother who had been a country girl in her youth, was a devotee of things such as tripe, chittlings, ect, and I well recollect the smell of pigs head (for brawn) and pigs trotters being cooked ,with the result,as you say, vast amounts of gelatine !!! I hate Pork pie for precisely that, ie, always a thickness of the stuff between the pie crust and the meat.

I agree whole heartedly Robin, and add the thought that by and large, the members here are 'Top Drawer' ! The site is almost 100% consistent in its welcoming and encouraging nature, andits apparently endless flow of both information and constructive comment !

Just a very idle thought, which has bugged me on more than one occasion ! How many dulcimers does 5000 members constitute ? I have in excess of ten so does my son, Geoff Black, John Shaw and Robin Clark! 50 , at least ? , from just a few UK members! And there are , I am sure, other UK/European members who own more than one? And I can't begin to imagine how many our US members collectively own? Any guesses for a total ????????????????

No problem with the Stilton Strumelia, tho' I,m going to have to bring beer as well cos' it suits the Stilton better than the cider. I,ll pass on the shoeshoeing: I'm going to have to use a dogteam to get the Stilton if the snow we have over here keeps falling! That bread looks good..... Strumelia said:

Hunting the Snark ! Hmm, make a great title for a book , or poem, or something ??? ( you could always use one of those other dulcimers you have Dana ) A couple of years back I left my 'goodies' bag (couple of tuners, spare strings, hammers, tuning wrench etc) , at a festival, got it back intact !
